First and foremost, Mexican food served in the United States is generally loaded with calories and, above all, fat. This comes from the oodles of cheese, sour cream and Kakao loaded onto huge portion sizes. This has turned the unassuming taco - a staple of Mexican cuisine, into the equivalent of unleashing a weapon of mass destruction on your stomach. In addition, portion sizes in Mexican-American restaurants are generally gigantic, with platters of tacos, complete with side dishes, being offered up. That's not even mentioning more fast food orientated Mexican establishments.

Simply look at a Chipotle burrito, a Taco Bell nacho platter or a quesadilla from Baja Fresh, just to name a few. All of these dishes are huge and will pull you down in more ways than one. Plus, these dishes are usually chock full of sodium, a problematic mineral that can wreck havoc to your vascular system.

Sure Mexican-American food tastes awesome but that doesn't mean you have to stick with it. There are plenty of authentic Mexican dishes out there you can opt for in order to save yourself from packing on pounds. These dishes are not only healthy and authentic but also filled with that bold Mexican taste.

Authentic south of the border dishes like chile rellenos, stuffed peppers filled with meat and baked in the oven, ceviche, seafood cooked by lemon juice and seasoned, and poc chuc, a mixture of grilled meats, onions, chilies and spices, are all vibrant dishes that satisfy the palette but don't wreck havoc on your midsection.

However, you don't need to abandon the beloved Mexican-American hybrid cuisine in favour of cutting calories. You can enjoy these big flavours if you simply take the time to alter your tastes. Small changes are all you really need to do to save yourself plenty of grams of fat and calories.

Choose corn tortillas instead of flour. Corn tortillas are virtually carb free and contain only a fraction of the calories compared to flour. Drop the sour cream and cheese and pick up extra salsas. Use the spiciness of Mexican cuisine to your advantage. Consuming foods that are spicy dulls ravenous appetites and helps you feel fuller faster.

Mexican cuisine doesn't deserve the label of being totally unhealthy. Like any other type of cuisine, the food is as healthy as you make it. Choose wisely the next time you have a hankering for flavours hailing south of the Rio Grands.
