YUMMY CHOCOLATE ZUCCHINI CAKE
4 eggs1 1/2 cups canola oil3 cups sugar3 cups grated zucchini2 squares baking chocolate, melted1 cup chopped nuts3 cups all-purpose flour1/2 tsp salt1 1/2 tsp baking powder1 tsp baking soda1 tsp ground cinnamon
In a big mixing bowl beat the eggs, canola oil, and sugar until well blended. high-tail in the zucchini and the cooled melted chocolate; mix well. In a medium bowl tear the flour, salt, baking powder, baking soda, and cinnamon together to mix well. Add the flour mixture to the egg mixture, mixing well. trek in the chopped nuts. Spoon the batter into a greased tube pan and bake at 350 degrees for one hour or until a wooden buy inserted in center comes out super. frosty in pan for several minutes before removing to a wire rack to continue cooling completely.
Note: This moist cake is luscious as is. You can, however, perform a drizzle of powdered sugar, a microscopic amount of milk and vanilla to drizzle over the top if you so desire.

3/4 cup all-purpose flour3/4 cup granulated sugar1 1/2 tsp baking powder1/2 tsp baking soda1/4 tsp salt1/3 cup + 1/4 cup unsweetened cocoa powder1/2 cup milk3 tbsp butter, melted1 tsp vanilla extract1/2 cup firmly packed brown sugar1 3/4 cups boiling water
Preheat oven to 350 degrees. Spray a 9-inch square baking pan or dish with nonstick cooking spray; status aside.
In a medium bowl, combine the flour, granulated sugar, baking powder, baking soda, salt, and the 1/3 cup cocoa. Combine the milk, butter, and vanilla in a measuring cup and travel the mixture into the dry ingredients fair until blended. Spoon the batter evenly into the prepared pan.
Combine the brown sugar and 1/4 cup cocoa in a minute bowl. Sprinkle the mixture over the batter in the pan. Pour boiling water over the entire mixture but do not toddle! Bake at 350 degrees for 35 to 38 minutes or until a toothpick inserted in the center comes out shipshape. icy for 10 minutes before serving. save onto a dessert plate or bowl and top with whipped cream or vanilla ice cream, if desired.
