American Cheese Soup

Do you have any childhood memories of going to camp? Besides the horseback riding, hiking and ghost stories around the campfire, most people that I've met always remember the food. Yes, the dreaded 'Camp Food', you either loved it or hated it. Wouldn't you agree?

Yes, we can remember back fondly of the watery eggs, doughy flapjacks, and hot dogs to the cold burgers on stale buns. Yet, at the time, after a full day of playing hard and being on the move for hours, and building up a ferocious appetite, everything served was well appreciated. Not a crumb left on the paper plate.

This recipe is one that I picked up years ago when I served as a helper in a camp kitchen, and I still make it now and then for my own family. It's one of the better items, and is sure to please, especially the kids. I remember not having to store away any leftovers of this soup, the campers cleaned it up.

For a family of four, you will need:

-1 stick of butter or margarine

-2 cubes or Tbls of chicken base, bouillon

-1 cup diced onion

-1/2 cup chopped celery

-1/2 cup of diced carrot

-2 tablespoons flour

-1 teaspoon salt

-4 cups milk (you may add more milk to thin soup if it is thicker than desired)

-2 medium size peeled raw potatoes, cubed

-One 16 oz. package of sliced American cheese

-2 slices ham, (or turkey ham) diced

In a 4 quart pot, melt the butter, stir in the chicken base. Then add the trio of onion, celery and carrots. Let this mixture simmer for 10 minutes. Once the trio has softened, blend in the flour and stir. This will thicken to a paste by absorbing all of the liquid.

Slowly add the milk just a little at a time, as to avoid lumps. Once all the milk is in, add the salt, and the cubed potatoes. Then add the cheese slices one at a time, these will melt in smoothly. Add the diced ham and let this simmer on low heat. You will know when it is finished when the potato cubes are fork tender.

Avoid boiling the soup, it will scald the milk and cause the potatoes to break down too much.
